Post subject:  Moroccan Fish Skewers

you will need 8 pre-soaked bamboo skewers

ingredients (serves 4)
600gr ling fish (or WBD) fillets cubed??? not sure what ling is.
mixed salad to serve with.
moroccan spice rub
2 teaspoons lemmon pepper.
1 teaspoon paprika
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander

1. make moroccan spice rub, combine with lemon pepper, paprika, tumeric an coriander in a glass or ceramic bowl.
2.Add fish. toss to coat, cover. refridgerate for 1-2 hours if time permits.
3. thread fish onto skewers. heat a Greased bbq plate on medium heat. cook skewers for 4 minuts each side or until cooked through. serve with salad.

ling is similar to cobbler, but is not a catfish and is primarily a southern species: http://www.sea-ex.com/fishphotos/images ... sh-pic.jpg
although they differ between species (of course) others are more similar to bearded cod. Could probably sub the ling for bearded cod or cobbler, only WBD if you're willing to try Rik's method of removing all prettiness as to eat with a clear conscience :lol:

Just tryed this with pink snapper awsome realy nice
