I normaly wrap mine in foil with a splash of oil, fennel, lemon and pepper..
Though last one I did was with just cajun spices and it came up a treat.

Best way and only way I do whole fish now is on the webber over hot coals.

Clean fish gut, scale & gill,

Prep fish thick areas put a few cut through to the bone 3 or 4 per side depending on thickness and size of fish.

Start the Webber

Place in dish then cover in lots of olive oil salt and peper. we have so cajun spice and Bri salt I dont mind using. Just cover and leave out while the coals start around 15mins.

Set the coal baskets apart so they will be under the fish when you first place the fish in and when you flip it.

Put the fish in and place the webber lid on full open for high heat.
10mins flip and based with the oil salt & peper mix left in the dish you preped the fish in.
Put lid back on.
Check after 10 mins flip and Based if cooked remove or continue to cook.

Thats about it you will work it out if you have cooked on a webber before :-)

Better to be looking at it, Than looking for it..
