Ok so this recipe, i tryed today with snook and used apple wood this came up a treat better then macky as hard as it is to say.

Yer for sure i can see it. been a hit they are so oily they smoke awsome.

^ just tried this recipe. A few minor changes. Make a mix of brown sugar and dried chilli flakes, 4 parts sugar and 1 part chilli flakes, then coat 3/4 of the meat you're using. A lot of the sugar caramelizes and becomes liquid in the pan, and because of this, when you turn the meat over, it still has enough caramelized sugar to coat and cook into the entire fish. Tastes great.

Try this one
Rub fillets in curry,turmeric,cummin seed powder. Add a little sea salt and touch of pepper.
Leave in fridge for 24 hours then wash quickly under the tap. Pat dry then place on oven racks with fan on oven door open a crack. Leave for 2-3 hours to get a nice skin. Get the smoker ready and place fillets in, let it smoke up but not to hot, leave to smoke out, check sawdust stir it up add a bit if needed then smoke up again and let cool down without over cooking. Comes out with a wicked texture and real smoky flavor ....so good,
