After already getting sick of eating crays cooking them using my conventional methods, I put the call out for some new ideas. One was pickling, I tried it, and its bloody awesome!

Remove raw cray meat from cray - chunk and put into clean glass jar.

Add one part vinegar, one part water into a sauce pan. To that mix add what ever spices, herbs, you like. I added salt, pepper, fresh garlic, chilli sauce and chopped jalapenos.

Get liquid mix to the boil, once boiling remove from heat and add to jar of raw cray meat and screw lid back on.

Eat after an hour or two and the remainder can keep in the fridge for a week or so.

The meat is remarkably tender and juicy. Really recommend you try this!
